Sausage and Apple Platter with Whole Grain Mustard

Serves: 4-6


These can also be cooked on a grill for a more summery preparation. 




11/2  pounds assorted sausages, or 8 total (Italian, bratwurst, knockwurst, etc.)

1-2 tablespoons olive oil

2 apples, each cored, cut into 8 wedges and each wedge halved  

Pinch brown sugar

1/4 cup whole grain mustard

1/2 8-ounce baguette, thinly sliced




Place a large pan over medium-high heat.  

If using pre-cooked sausages, add to the pan and cook for 5-7 minutes, turning occasionally, until the exterior is slightly charred and caramelized.  Set aside to rest.

If using raw sausages, poke a few holes in each with a fork.  Heat 1 tablespoon olive oil in the pan.  Add sausages and sauté for about 10 minutes, turning occasionally, until the exterior is browned.  Add 1/4 cup water to the pan and cover.  Simmer until the sausage is cooked through (you may have to add a little more water if necessary), about 10 minutes more.  If you want the sausages even more browned, you can remove the cover and cook off the water at this point.


In a separate pan, warm remaining olive oil over medium heat.  Add apples, a tablespoon of water and the brown sugar.  Cook, stirring occasionally, until apples are slightly softened but still hold their shape, about 5-8 minutes.  


Halve sausages, and arrange on a platter with the apples, a bowl of mustard and sliced baguette.
